Yellowfin, as its name implies, is distinguished from other tunas by a long, bright-yellow dorsal fin and a yellow strip down its side. Yellowfin tuna has a mild, meaty flavor. The ideal is bright translucent red but when cooked, turns brown to grayish-tan, firm and moist. Yellowfin Tuna is an excellent source of healthy, extra lean protein. It is also low in saturated fat and low in sodium. It is rich in niacin, vitamin B6, vitamin B12, phosphorus and selenium. Yellowfin Tuna is a good source of magnesium. It is extremely popular for baking, broiling, grilling, smoking and sautéing.
